Hello Kitty birthday cake

For Milla's 6th birthday party, she had wished for a Hello Kitty theme, and we made a Hello Kitty birthday cake for her. Because we had party guests with gluten allergy, we made the cake with glutenfree dark chocolate mud cake mix from the health food isle in the supermarket. The cake turned out very yummy, and you couldn't really taste that we had been 'cheating' by using cake mix. We wanted the cake to be a little higher than the cake tin we had, so we decided to make two cakes and put them on top of each other. We used three cake mixes, one-and-a-half batch for each cake.

First, I ordered a cake tin online. eBay have got several ones, and we just went with the cheapest one, around $10.

After greasing it with butter and then shaking semolina around in the tin, we baked two cakes, and they came out of the tin easily and intact - looking like Hello Kitty, yay! After cooling we made a chocolate ganache that we put in between the two cake layers and all over the cake. For the ganache we melted half-half milk and dark chocolate with a little cream in a pot on the stove (no exact measures, we just 'ish'ed' it), then removed from heat and let cool a little before covering the cake. I know that proper ganache should be melted over boiling water blah-blah, but since we are not professional bakers, we didn't bother with that, and it still turned out very tasty - just look below!

After covering the cake in chocolate ganache, we rolled out our white fondant icing (and you can read in this blogpost how we made the icing) to cover the cake. Then we made a bow from our red icing, and this we just cut out free hand. I used a little water glass to make the indented half-circles in the middle of the bow, and then I cut out an oval piece and placed on top, in the middle of the bow. The eyes and nose we also rolled out of colour fondant icing. For the whiskers we used liquorice logs, cut in half. And finally, we cut out 'Milla 6' of the red fondant icing, brushed the letters with a little water on the back, and stuck them on the front of the cake. And voila, we had our Hello Kitty birthday cake!

  1. Cute :) Just like Ava's Hello Kitty cake a few years ago - only more "professional" looking!

    1. Yes, I remember you made one. I went to the cake shop to try and rent a tin like you did, but it was SO expensive. Worked out cheaper to just buy it online. Oh, Sally, the top looked quite good, but we struggled with the sides. And because it was two cakes on top of each other, no matter how much we trimmed, the sides still looked bumpy! Your cake was perfection if I remember correct. But the most beautiful item that day in the park, was the amazing pinata you made!

    2. Thanks :) My Hello Kitty cake was far from perfect but I managed to hide the bumpy bits ;) I remember being impressed with how well the icing turned out and then, without really thinking about the position, I shoved in the first liquorice whisker and realised straight away that it was in the completely wring place! I almost cried. I had to patch it which didn't work out so well - I was just sneaky and photoshopped out the hole before posting photos of the cake online ;)
